Preheat oven to 350 degrees. Grease bottom of a 9” X 9” glass casserole dish. Make enough instant mashed potatoes for 8 cups serving according to directions on box. You may also use 8 cups of real mashed potatoes. Add remaining ingredients (remember to set aside ½ cup of shredded cheese) and mix well. Spread potato mixture into greased casserole dish. Sprinkle ½ cup of cheese over top and bake at 350 degrees until brown and bubbly, approximately 20 minutes. Allow to set 5 minutes before serving.
