2 cups water
2 tsp. dried lemon peel
2 Tbsp. Honey
1 cup dried peppermint
Combine all ingredients in a small saucepan and bring to a boil. Boil until the liquid has been reduced by about half, about 4 to 5 minutes. Strain, bottle, and refrigerate.
Make this syrup ahead of time and store it in the refrigerator. When you are in the mood for and iced herb tea, swirl one or two tablespoons of the syrup into one cup of sparkling water and enjoy!
